Veggie Laksa Delight

Vegetarian Laksa Soup (Vegan/Asian)

This vegan-friendly Vegetarian Laksa Soup is a delicious and flavorful Asian-inspired dish. It is made with a variety of vegetables, noodles, and a flavorful coconut-based broth. This soup is sure to be a hit with everyone in the family!

Ingredients:

  • 1 tablespoon vegetable oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon sugar
  • 1 can (14 ounces) coconut milk
  • 2 cups vegetable broth
  • 1 cup sliced mushrooms
  • 1 cup diced carrots
  • 1 cup diced bell peppers
  • 1 cup snow peas
  • 1 cup cooked noodles
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper to taste

Instructions:

  1. Heat the oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  2. Add the ginger, turmeric, coriander, cumin, chili powder, and sugar and cook for 1 minute.
  3. Add the coconut milk, vegetable broth, mushrooms, carrots, bell peppers, and snow peas and bring to a boil.
  4. Reduce the heat to low and simmer for 10 minutes.
  5. Add the cooked noodles and simmer for 5 minutes.
  6. Stir in the cilantro and season with salt and pepper to taste.
  7. Serve hot.
