Vegetarian Laksa Soup (Vegan/Asian)

Ingredients:
- 1 tablespoon vegetable oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon grated ginger
- 1 teaspoon ground turmeric
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1 teaspoon sugar
- 1 can (14 ounces) coconut milk
- 2 cups vegetable broth
- 1 cup sliced mushrooms
- 1 cup diced carrots
- 1 cup diced bell peppers
- 1 cup snow peas
- 1 cup cooked noodles
- 1/4 cup chopped fresh cilantro
- Salt and pepper to taste
Instructions:
- Heat the oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
- Add the ginger, turmeric, coriander, cumin, chili powder, and sugar and cook for 1 minute.
- Add the coconut milk, vegetable broth, mushrooms, carrots, bell peppers, and snow peas and bring to a boil.
- Reduce the heat to low and simmer for 10 minutes.
- Add the cooked noodles and simmer for 5 minutes.
- Stir in the cilantro and season with salt and pepper to taste.
- Serve hot.
