Vegetarian Chickpea Tikka Masala

Ingredients:

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon garam masala
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground ginger
  • 1/2 teaspoon cayenne pepper
  • 1 (14.5 ounce) can diced tomatoes
  • 1 (15 ounce) can chickpeas, drained and rinsed
  • 1/2 cup plain Greek yogurt
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper, to taste

Instructions:

  1. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  2. Add the cumin, coriander, garam masala, turmeric, ginger, and cayenne pepper and cook for 1 minute.
  3. Add the diced tomatoes and chickpeas and bring to a simmer. Cook for 10 minutes, stirring occasionally.
  4. Stir in the Greek yogurt and cilantro and season with salt and pepper, to taste.
  5. Serve over cooked rice or with naan bread.
