Vegan Goulash
This vegan goulash is a hearty and flavorful dish that is sure to please. It is made with simple ingredients and is easy to make. It is a great meal for a weeknight dinner or a potluck.
Ingredients:
* 2 tablespoons olive oil
* 1 onion, diced
* 2 cloves garlic, minced
* 2 tablespoons paprika
* 1 teaspoon dried oregano
* 1 teaspoon dried thyme
* 1 teaspoon ground cumin
* 1 teaspoon ground coriander
* 1/2 teaspoon ground black pepper
* 2 cups vegetable broth
* 2 cups diced tomatoes
* 2 cups cooked chickpeas
* 2 cups cooked quinoa
* 2 tablespoons tomato paste
* 2 tablespoons nutritional yeast
* 2 tablespoons chopped fresh parsley
Instructions:
1. Heat the olive oil in a large pot over medium heat.
2. Add the onion and garlic and cook until softened, about 5 minutes.
3. Add the paprika, oregano, thyme, cumin, coriander, and black pepper and cook for 1 minute.
4. Add the vegetable broth, tomatoes, chickpeas, quinoa, tomato paste, and nutritional yeast and stir to combine.
5. Bring to a boil, then reduce the heat to low and simmer for 15 minutes.
6. Stir in the parsley and season with salt and pepper to taste.
7. Serve hot.
