Vegan German Potato Soup (Kartoffelsuppe)
Ingredients:
– 2 tablespoons olive oil
– 1 onion, diced
– 2 cloves garlic, minced
– 2 carrots, diced
– 2 celery stalks, diced
– 2 potatoes, peeled and diced
– 2 cups vegetable broth
– 1 teaspoon dried thyme
– 1 teaspoon dried oregano
– 1 teaspoon smoked paprika
– 1/2 teaspoon sea salt
– 1/4 teaspoon black pepper
– 1/4 cup vegan cream cheese
– 2 tablespoons nutritional yeast
– 2 tablespoons chopped fresh parsley
Instructions:
1. Heat the olive oil in a large pot over medium heat. Add the onion, garlic, carrots, and celery and cook for 5 minutes, stirring occasionally.
2. Add the potatoes, vegetable broth, thyme, oregano, smoked paprika, salt, and pepper. Bring to a boil, then reduce the heat and simmer for 15 minutes, or until the potatoes are tender.
3. Remove from the heat and stir in the vegan cream cheese, nutritional yeast, and parsley.
4. Serve hot. Enjoy!
