The Best Eggs Benedict for Two

This recipe for Eggs Benedict is sure to please. It’s easy to make and is sure to be a hit with your family and friends. The combination of poached eggs, Canadian bacon, and hollandaise sauce is a classic that never gets old.

Ingredients:

* 2 English muffins
* 4 slices of Canadian bacon
* 4 eggs
* 2 tablespoons of white vinegar
* 2 tablespoons of butter
* 2 tablespoons of all-purpose flour
* 1 cup of milk
* 2 tablespoons of lemon juice
* Salt and pepper to taste

Instructions:

1. Preheat the oven to 350 degrees Fahrenheit.
2. Place the Canadian bacon on a baking sheet and bake for 10 minutes.
3. Fill a large pot with water and add the vinegar. Bring the water to a simmer.
4. Crack the eggs into the simmering water and poach for 3 minutes.
5. Meanwhile, melt the butter in a small saucepan over medium heat.
6. Add the flour and whisk until combined.
7. Slowly add the milk, whisking constantly until the sauce thickens.
8. Remove the sauce from the heat and stir in the lemon juice.
9. Toast the English muffins and top each with a slice of Canadian bacon.
10. Place a poached egg on top of each slice of bacon.
11. Drizzle the hollandaise sauce over the eggs and season with salt and pepper.
