Ingredients:

– 1 onion, diced

– 1 red bell pepper, diced
– 1 zucchini, diced
– 1 can (14.5 ounces) diced tomatoes
– 1 can (15 ounces) chickpeas, drained and rinsed
– 1 teaspoon dried oregano
– 1 teaspoon dried basil
– Salt and pepper, to taste
– 2 cups cooked quinoa
– 1/4 cup crumbled feta cheese
Instructions:
1. Heat the olive oil in a large skillet over medium heat.
2. Add the onion and garlic and cook until softened, about 5 minutes.
3. Add the bell pepper and zucchini and cook for another 5 minutes.
4. Add the diced tomatoes, chickpeas, oregano, and basil. Season with salt and pepper, to taste.
5. Simmer for 10 minutes, stirring occasionally.
6. Add the cooked quinoa and stir to combine.
