Taco Stuffed Sweet Potatoes
This delicious and easy-to-make dish is a great way to enjoy tacos without the traditional tortilla. Sweet potatoes are stuffed with a flavorful taco filling and topped with your favorite taco toppings. It’s a great meal for any night of the week!
Ingredients:
– 4 large sweet potatoes
– 1 tablespoon olive oil
– 1/2 onion, diced
– 1 bell pepper, diced
– 1 pound ground beef
– 1 tablespoon chili powder
– 1 teaspoon cumin
– 1 teaspoon garlic powder
– 1 teaspoon paprika
– 1/2 teaspoon oregano
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
– 1/2 cup salsa
– 1/2 cup shredded cheese
– Optional toppings: sour cream, diced tomatoes, diced avocado, cilantro, etc.
Instructions:
1. Preheat oven to 400 degrees F.
2. Wash and dry sweet potatoes, then pierce each one several times with a fork. Place on a baking sheet and bake for 45 minutes, or until tender.
3. Meanwhile, heat olive oil in a large skillet over medium heat. Add onion and bell pepper and cook until softened, about 5 minutes.
4. Add ground beef and cook until no longer pink, about 8 minutes.
5. Add chili powder, cumin, garlic powder, paprika, oregano, salt, and pepper. Stir to combine.
6. Add salsa and cook for an additional 5 minutes.
7. Remove sweet potatoes from oven and let cool for 5 minutes.
8. Cut each sweet potato in half lengthwise and scoop out the flesh, leaving a 1/4-inch border.
9. Place the sweet potato halves on a baking sheet.
10. Divide the taco filling among the sweet potato halves.
11. Top with shredded cheese.
12. Bake for 10 minutes, or until cheese is melted and bubbly.
13. Serve with desired toppings.
