Simply Delicious Garlic Butter Quinoa

Ingredients

  • 1 cup quinoa, rinsed and drained
  • 2 cups water or vegetable broth
  • 4 cloves garlic, minced
  • 3 tbsp unsalted butter
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup fresh parsley, chopped (optional)

Instructions

  1. In a medium saucepan, bring 2 cups of water or vegetable broth to a boil over high heat.
  2. Add the quinoa and reduce the heat to low. Cover the saucepan with a tight-fitting lid and simmer for about 15-20 minutes, until the liquid is absorbed and the quinoa is tender.
  3. In the meantime, melt the butter in a separate small saucepan over medium heat.
  4. Add the minced garlic and sauté for 2-3 minutes, until fragrant and lightly browned. Remove from the heat.
  5. Once the quinoa is cooked, remove from the heat and fluff with a fork. Add the garlic butter mixture, salt, and black pepper, and stir until well combined.
  6. If desired, sprinkle fresh parsley on top for a burst of color and flavor.
  7. Transfer the garlic butter quinoa to a serving bowl and enjoy!
