Vegetarian French Onion Soup

Ingredients:
– 4 large onions, thinly sliced
– 2 tablespoons olive oil
– 2 cloves garlic, minced
– 2 tablespoons all-purpose flour
– 4 cups vegetable broth
– 2 tablespoons soy sauce

– 1 teaspoon dried oregano
– 1/2 teaspoon freshly ground black pepper
– 4 slices French bread, toasted

Instructions:
1. Heat the olive oil in a large pot over medium heat.
2. Add the onions and garlic and cook, stirring occasionally, until the onions are softened and lightly browned, about 10 minutes.
3. Add the flour and cook, stirring constantly, for 1 minute.
4. Add the vegetable broth, soy sauce, thyme, oregano, and pepper and bring to a boil.
5. Reduce the heat to low and simmer, stirring occasionally, for 20 minutes.
6. Preheat the oven to 350°F.
7. Ladle the soup into oven-safe bowls and top each with a slice of toasted French bread and a sprinkle of Gruyere cheese.
8. Place the bowls on a baking sheet and bake for 10 minutes, or until the cheese is melted and bubbly.
