Grilled Pesto Chicken Wraps

This delicious and easy-to-make wrap is perfect for a quick lunch or dinner. The combination of grilled chicken, pesto, and vegetables makes for a flavorful and nutritious meal.

Ingredients:

  • 2 boneless, skinless chicken breasts
  • 2 tablespoons of pesto
  • 1/4 cup of diced red onion
  • 1/4 cup of diced red bell pepper
  • 1/4 cup of diced yellow bell pepper
  • 1/4 cup of diced zucchini
  • 2 tablespoons of olive oil
  • 4 whole wheat tortillas
  • Salt and pepper to taste

Instructions:

  1. Preheat the grill to medium-high heat.
  2. Season the chicken breasts with salt and pepper and brush with olive oil.
  3. Grill the chicken for 4-5 minutes per side, or until cooked through.
  4. Remove the chicken from the grill and let cool for 5 minutes.
  5. Dice the chicken into small cubes.
  6. In a medium bowl, combine the diced chicken, pesto, red onion, red bell pepper, yellow bell pepper, and zucchini.
  7. Mix until all ingredients are evenly distributed.
  8. Heat the tortillas on the grill for 1-2 minutes per side, or until lightly charred.
  9. Divide the chicken mixture evenly among the tortillas.
  10. Fold the tortillas into wraps and serve.
