Easy Beef Empanadas
These easy beef empanadas are a delicious and savory snack that can be enjoyed as an appetizer or a main course. The beef filling is spiced with cumin, garlic, and chili powder, and the empanadas are baked until golden brown. Enjoy these empanadas with a side of salsa or guacamole for a complete meal.
Ingredients:
- 1 lb ground beef
- 1/2 onion, diced
- 1/2 bell pepper, diced
- 1/2 teaspoon garlic powder
- 1/2 teaspoon cumin
- 1/2 teaspoon chili powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 package of empanada wrappers
- 1 egg, beaten
Instructions:
- Preheat oven to 375°F.
- In a large skillet over medium-high heat, cook the ground beef until browned. Drain off any excess fat.
- Add the onion, bell pepper, garlic powder, cumin, chili powder, salt, and black pepper to the skillet. Cook for an additional 5 minutes, stirring occasionally.
- Remove the skillet from the heat and let the beef mixture cool for 10 minutes.
- Lay out the empanada wrappers on a clean work surface. Place a spoonful of the beef mixture in the center of each wrapper. Brush the edges of the wrappers with the beaten egg.
- Fold the wrappers in half and press the edges together to seal. Use a fork to crimp the edges.
- Place the empanadas on a baking sheet lined with parchment paper. Brush the tops of the empanadas with the beaten egg.
- Bake for 20-25 minutes, or until golden brown.
- Serve warm with salsa or guacamole.
