Detox Moroccan Lentil Soup

This Detox Moroccan Lentil Soup is a delicious and nutritious way to cleanse your body and get your daily dose of vegetables. Ingredients:

– 1 cup of green lentils
– 2 tablespoons of olive oil
– 1 onion, diced
– 2 cloves of garlic, minced
– 1 teaspoon of ground cumin
– 1 teaspoon of ground coriander
– 1 teaspoon of paprika
– 1 teaspoon of turmeric
– 1 teaspoon of ground ginger
– 1 teaspoon of ground cinnamon
– 1/2 teaspoon of cayenne pepper
– 4 cups of vegetable broth
– 2 carrots, diced
– 2 celery stalks, diced
– 1 red bell pepper, diced
– 1 can of diced tomatoes
– 1/4 cup of fresh parsley, chopped
– Salt and pepper to taste

Instructions:

1. Heat the olive oil in a large pot over medium heat.
2. Add the onion and garlic and cook until softened, about 5 minutes.
3. Add the cumin, coriander, paprika, turmeric, ginger, cinnamon, and cayenne pepper and cook for 1 minute.
4. Add the lentils, vegetable broth, carrots, celery, bell pepper, and tomatoes and bring to a boil.
5. Reduce the heat to low and simmer for 25 minutes, or until the lentils are tender.
6. Add the parsley and season with salt and pepper to taste.
7. Serve hot.
