Jamaican Curry Chicken

Ingredients:
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 tablespoons curry powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon ground turmeric
- 1 teaspoon ground cinnamon
- 1 teaspoon ground allspice
- 1 teaspoon ground nutmeg
- 1 teaspoon ground black pepper
- 1 teaspoon salt
- 1/2 teaspoon cayenne pepper
- 1/2 cup chicken broth
- 1 (14.5 ounce) can diced tomatoes
- 1 pound boneless, skinless chicken breasts, cut into cubes
- 1/2 cup coconut milk
- 2 tablespoons fresh cilantro, chopped
- Cooked rice, for serving
Instructions:
- Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
- Add the ginger, curry powder, cumin, coriander, turmeric, cinnamon, allspice, nutmeg, black pepper, salt, and cayenne pepper. Cook, stirring, for 1 minute.
- Add the chicken broth and diced tomatoes and bring to a simmer. Add the chicken cubes and cook until the chicken is cooked through, about 10 minutes.
- Stir in the coconut milk and cilantro and cook for 1 minute more.
- Serve over cooked rice.
