Jamaican Curry Chicken

This Jamaican Curry Chicken is a flavorful and spicy dish that is sure to please. The combination of curry powder, garlic, and ginger creates a unique and delicious flavor. The chicken is cooked in a flavorful sauce and served over rice for a complete meal.

Ingredients:

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground allspice
  • 1 teaspoon ground nutmeg
  • 1 teaspoon ground black pepper
  • 1 teaspoon salt
  • 1/2 teaspoon cayenne pepper
  • 1/2 cup chicken broth
  • 1 (14.5 ounce) can diced tomatoes
  • 1 pound boneless, skinless chicken breasts, cut into cubes
  • 1/2 cup coconut milk
  • 2 tablespoons fresh cilantro, chopped
  • Cooked rice, for serving

Instructions:

  1. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  2. Add the ginger, curry powder, cumin, coriander, turmeric, cinnamon, allspice, nutmeg, black pepper, salt, and cayenne pepper. Cook, stirring, for 1 minute.
  3. Add the chicken broth and diced tomatoes and bring to a simmer. Add the chicken cubes and cook until the chicken is cooked through, about 10 minutes.
  4. Stir in the coconut milk and cilantro and cook for 1 minute more.
  5. Serve over cooked rice.
