Easy Shakshuka (Eggs in Hell)
Shakshuka is a traditional Middle Eastern dish of eggs poached in a spicy tomato sauce. This easy version of the classic dish is a great way to enjoy a delicious breakfast or brunch. It’s also a great way to use up any leftover vegetables you have in the fridge.
Ingredients:
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon chili powder
- 1/4 teaspoon ground black pepper
- 1 (14.5 ounce) can diced tomatoes
- 1/4 cup water
- 4 large eggs
- 1/4 cup crumbled feta cheese
- 1/4 cup chopped fresh parsley
Instructions:
- Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
- Add the bell pepper, cumin, paprika, chili powder, and black pepper and cook for another 5 minutes.
- Add the diced tomatoes and water and bring to a simmer. Simmer for 10 minutes.
- Crack the eggs into the skillet and cover. Cook until the eggs are cooked to your desired doneness, about 5 minutes.
- Sprinkle with feta cheese and parsley and serve.
