Orzo Vegetable Soup

Ingredients:
* 2 tablespoons olive oil
* 1 onion, diced
* 2 cloves garlic, minced
* 2 carrots, diced
* 2 celery stalks, diced
* 2 cups vegetable broth
* 2 cups water
* 1 (14.5 ounce) can diced tomatoes
* 1 teaspoon dried oregano
* 1 teaspoon dried basil
* 1/2 teaspoon dried thyme
* 1/2 teaspoon salt
* 1/4 teaspoon black pepper
* 1/2 cup orzo pasta
* 2 cups fresh spinach
Instructions:
1. Heat the olive oil in a large pot over medium heat.
2. Add the onion and garlic and cook until the onion is softened, about 5 minutes.
3. Add the carrots and celery and cook for an additional 5 minutes.
4. Add the vegetable broth, water, tomatoes, oregano, basil, thyme, salt, and pepper. Bring to a boil.
5. Reduce the heat to low and simmer for 10 minutes.
6. Add the orzo pasta and simmer for an additional 10 minutes.
7. Add the spinach and cook until wilted, about 2 minutes.
8. Serve hot.
