Healthy Air Fryer Eggplant Parmesan – Easy Recipe
This Healthy Air Fryer Eggplant Parmesan is a delicious and easy-to-make dish that is perfect for a weeknight dinner. Ingredients:
- 1 large eggplant, sliced into 1/4-inch thick rounds
- 1/2 cup all-purpose flour
- 2 eggs, beaten
- 1 cup Italian-style breadcrumbs
- 1/4 cup olive oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- 1/4 cup freshly grated Parmesan cheese
- 2 tablespoons chopped fresh basil
Instructions:
- Preheat air fryer to 400°F.
- In a shallow bowl, combine the flour, eggs, and breadcrumbs. Mix until combined.
