Ingredients:

  • 1 large eggplant, sliced into 1/4-inch thick rounds
  • 1/2 cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup Italian-style breadcrumbs
  • 1/4 cup olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/4 cup freshly grated Parmesan cheese
  • 2 tablespoons chopped fresh basil

Instructions:

  1. Preheat air fryer to 400°F.
  2. In a shallow bowl, combine the flour, eggs, and breadcrumbs. Mix until combined.
  3. In a separate bowl, combine the olive oil, garlic powder, oregano, basil, salt, and pepper. Mix until combined.
