Fideo Soup Delight

Sopita de Fideo

Sopita de Fideo is a traditional Mexican soup made with thin noodles, vegetables, and a flavorful broth. It is a simple and delicious dish that can be enjoyed as a light meal or as a side dish. This recipe is easy to make and can be customized with your favorite vegetables and spices.

Ingredients:

– 2 tablespoons olive oil
– 1/2 onion, diced
– 2 cloves garlic, minced
– 1/2 teaspoon ground cumin
– 1/2 teaspoon chili powder
– 1/4 teaspoon oregano
– 1/4 teaspoon paprika
– 2 cups vegetable broth
– 1 can (14.5 ounces) diced tomatoes
– 1/2 cup uncooked fideo noodles
– 1/2 cup frozen corn
– 1/2 cup diced bell pepper
– 1/2 cup cooked black beans
– Salt and pepper, to taste

Instructions:

1. Heat the olive oil in a large pot over medium heat.
2. Add the onion and garlic and cook until softened, about 5 minutes.
3. Add the cumin, chili powder, oregano, and paprika and cook for 1 minute.
4. Add the vegetable broth, tomatoes, fideo noodles, corn, bell pepper, and black beans.
5. Bring to a boil, then reduce heat to low and simmer for 10 minutes, or until the noodles are cooked.
6. Season with salt and pepper, to taste.
7. Serve hot.
