Easy and Delicious Recipe

Ingredients:

– 2 tablespoons olive oil
– 1 onion, diced
– 2 cloves garlic, minced
– 1 red bell pepper, diced
– 1 green bell pepper, diced
– 1 teaspoon dried oregano
– 1 teaspoon dried basil
– 1 teaspoon dried thyme
– 1 teaspoon smoked paprika
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
– 1 (14.5 ounce) can diced tomatoes
– 1 (15 ounce) can black beans, drained and rinsed
– 1 (15 ounce) can corn, drained
– 1/2 cup vegetable broth
– 1/4 cup chopped fresh cilantro
– 2 tablespoons lime juice

Instructions:

1. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.

2. Add the bell peppers, oregano, basil, thyme, smoked paprika, salt, and black pepper and cook for another 5 minutes.

3. Add the diced tomatoes, black beans, corn, and vegetable broth and bring to a simmer. Simmer for 10 minutes.

4. Stir in the cilantro and lime juice and cook for another 5 minutes.

5. Serve over cooked rice or quinoa. Enjoy!
