Dill-Roasted Carrots Recipe

This recipe for dill-roasted carrots is a simple and delicious side dish that makes a great addition to any meal. Roasting the carrots in the oven with fresh dill, garlic, and olive oil gives them a slightly caramelized and sweet flavor that balances well with the earthy herbiness of the dill.


  • 1 pound carrots, washed and peeled
  • 2 tablespoons fresh dill, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper, to taste


  1. Preheat the oven to 425°F.
  2. Line a baking sheet with parchment paper.
  3. Cut the carrots into evenly sized pieces, about 1 inch long and 1/2 inch thick.
