Ingredients
* 1 lb ground beef
* 1 packet taco seasoning
* 1 can black beans
* 1 can diced tomatoes
* 1 can corn
* 1 package of 8-inch flour tortillas
* 1 cup shredded cheese
* 1/2 cup sour cream
* 1/4 cup chopped cilantro
* 1/4 cup diced onion
* 1/4 cup diced jalapeno
* 1/4 cup olive oil
* 1/4 cup lime juice
* 1 teaspoon garlic powder
* 1 teaspoon chili powder
* 1 teaspoon cumin
* Salt and pepper to taste
Instructions
1. Preheat oven to 350 degrees F.
2. In a large skillet, cook ground beef over medium-high heat until browned. Drain fat.
3. Add taco seasoning, black beans, tomatoes, and corn to the skillet. Simmer for 10 minutes.
4. Grease a 9×13 inch baking dish.
5. Place 4 tortillas in the bottom of the baking dish.
6. Spread half of the beef mixture over the tortillas.
7. Sprinkle with half of the cheese.
8. Place remaining 4 tortillas over the cheese.
9. Spread remaining beef mixture over the tortillas.
10. Sprinkle with remaining cheese.
11. Bake for 25 minutes.
12. In a small bowl, mix together sour cream, cilantro, onion, jalapeno, olive oil, lime juice, garlic powder, chili powder, cumin, salt, and pepper.
13. Serve enchiladas with sour cream mixture.
