Zucchini Fritters with Feta and Dill
These zucchini fritters are a delicious and healthy way to enjoy the summer bounty of zucchini. The feta and dill add a delicious flavor to the fritters, making them a great side dish or appetizer.
* 2 medium zucchini, grated
* 1/2 cup feta cheese, crumbled
* 2 tablespoons fresh dill, chopped
* 2 eggs
* 1/4 cup all-purpose flour
* 1/4 teaspoon baking powder
* 1/4 teaspoon garlic powder
* 1/4 teaspoon onion powder
* Salt and pepper, to taste
* 2 tablespoons olive oil
1. In a large bowl, combine the grated zucchini, feta cheese, and dill.
2. In a separate bowl, whisk together the eggs, flour, baking powder, garlic powder, onion powder, salt, and pepper.
3. Add the egg mixture to the zucchini mixture and stir until combined.
4. Heat the olive oil in a large skillet over medium heat.
5. Drop the zucchini mixture by the tablespoonful into the hot oil and cook for 2-3 minutes per side, or until golden brown.
6. Remove the fritters from the skillet and place on a paper towel-lined plate to drain.
7. Serve warm.
