Crispy Italian Arancini

Arancini, Italian Rice Balls

Arancini, Italian Rice Balls, are a delicious and traditional Italian dish. They are made with cooked rice, cheese, and other ingredients, and are then deep-fried until golden and crispy. This recipe will make about 12-15 Arancini.

Ingredients:

  • 2 cups cooked white rice
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup diced mozzarella cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup diced onion
  • 1/4 cup diced red bell pepper
  • 1/4 cup diced mushrooms
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup breadcrumbs
  • Vegetable oil, for frying

Instructions:

  1. In a large bowl, combine the cooked rice, Parmesan cheese, mozzarella cheese, parsley, onion, bell pepper, mushrooms, garlic powder, Italian seasoning, salt, and pepper. Mix until all ingredients are evenly distributed.
  2. Form the mixture into 12-15 balls, about the size of a golf ball. Place the balls on a plate and set aside.
  3. Set up a breading station with three shallow dishes. Place the flour in one dish, the beaten eggs in another, and the breadcrumbs in the third.
  4. Dip each ball in the flour, then the eggs, and then the breadcrumbs. Make sure each ball is evenly coated with each ingredient.
  5. Heat the vegetable oil in a large skillet over medium-high heat. When the oil is hot, add the Arancini and fry for about 3-4 minutes, or until golden brown and crispy.
  6. Remove the Arancini from the skillet and place on a paper towel-lined plate to drain any excess oil.
  7. Serve warm and enjoy!
