Arancini, Italian Rice Balls
Arancini, Italian Rice Balls, are a delicious and traditional Italian dish. They are made with cooked rice, cheese, and other ingredients, and are then deep-fried until golden and crispy. This recipe will make about 12-15 Arancini.
Ingredients:
- 2 cups cooked white rice
- 1/2 cup grated Parmesan cheese
- 1/2 cup diced mozzarella cheese
- 1/4 cup chopped fresh parsley
- 1/4 cup diced onion
- 1/4 cup diced red bell pepper
- 1/4 cup diced mushrooms
- 1/2 teaspoon garlic powder
- 1/2 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup all-purpose flour
- 2 eggs, beaten
- 1 cup breadcrumbs
- Vegetable oil, for frying
Instructions:
- In a large bowl, combine the cooked rice, Parmesan cheese, mozzarella cheese, parsley, onion, bell pepper, mushrooms, garlic powder, Italian seasoning, salt, and pepper. Mix until all ingredients are evenly distributed.
- Form the mixture into 12-15 balls, about the size of a golf ball. Place the balls on a plate and set aside.
- Set up a breading station with three shallow dishes. Place the flour in one dish, the beaten eggs in another, and the breadcrumbs in the third.
- Dip each ball in the flour, then the eggs, and then the breadcrumbs. Make sure each ball is evenly coated with each ingredient.
- Heat the vegetable oil in a large skillet over medium-high heat. When the oil is hot, add the Arancini and fry for about 3-4 minutes, or until golden brown and crispy.
- Remove the Arancini from the skillet and place on a paper towel-lined plate to drain any excess oil.
- Serve warm and enjoy!
