Vegetarian Chili

This vegetarian chili is a hearty and flavorful dish that is perfect for a busy college student. It is easy to make and requires minimal ingredients. It is also a great way to get your daily dose of vegetables.

Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 jalapeno pepper, diced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (15 ounce) can black beans, drained and rinsed
  • 1 (15 ounce) can kidney beans, drained and rinsed
  • 1 (15 ounce) can diced tomatoes
  • 1 (8 ounce) can tomato sauce
  • 1 cup vegetable broth

Instructions:

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion, garlic, bell peppers, and jalapeno pepper. Cook for 5 minutes, stirring occasionally.
  3. Add the chili powder, cumin, oregano, salt, and black pepper. Cook for 1 minute, stirring constantly.
  4. Add the black beans, kidney beans, diced tomatoes, tomato sauce, and vegetable broth. Stir to combine.
  5. Bring the mixture to a boil, then reduce the heat to low and simmer for 20 minutes, stirring occasionally.
  6. Serve hot with your favorite toppings.
