Thai Chicken Coconut Curry

This Thai Chicken Coconut Curry is a delicious and flavorful dish that is sure to please. It is made with a combination of chicken, vegetables, and a creamy coconut curry sauce. The dish is easy to make and can be served with rice or noodles.

Ingredients:

  • 1 lb boneless, skinless chicken breasts, cut into cubes
  • 1 red bell pepper, diced
  • 1 onion, diced
  • 1 can (14 oz) coconut milk
  • 2 tablespoons red curry paste
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon ground ginger
  • 1 teaspoon garlic powder
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon cayenne pepper
  • 1/4 cup fresh cilantro, chopped
  • Salt, to taste

Instructions:

  1. In a large skillet over medium-high heat, add the chicken and cook until lightly browned, about 5 minutes.
  2. Add the bell pepper and onion and cook until softened, about 5 minutes.
  3. Add the coconut milk, red curry paste, fish sauce, brown sugar, ginger, garlic powder, coriander, cumin, turmeric, black pepper, and cayenne pepper. Stir to combine.
  4. Bring the mixture to a boil, then reduce the heat to low and simmer for 10 minutes.
  5. Stir in the cilantro and season with salt, to taste.
  6. Serve over rice or noodles.
