Lemony Orzo Chickpea Soup

This Lemony Orzo Chickpea Soup is a light and flavorful soup that is perfect for a light lunch or dinner. It is packed with protein and fiber from the chickpeas and is full of bright and zesty flavors from the lemon and herbs.


– 2 tablespoons olive oil
– 1 onion, diced
– 2 cloves garlic, minced
– 2 carrots, diced
– 2 celery stalks, diced
– 2 teaspoons dried oregano
– 1 teaspoon dried thyme
– 6 cups vegetable broth
– 1 (15-ounce) can chickpeas, drained and rinsed
– 1 cup orzo
– Juice of 1 lemon
– Salt and pepper, to taste
– Chopped fresh parsley, for garnish


1. Heat the olive oil in a large pot over medium heat.
2. Add the onion, garlic, carrots, and celery and cook until softened, about 5 minutes.
3. Add the oregano and thyme and cook for 1 minute.
4. Pour in the vegetable broth and bring to a boil.
5. Add the chickpeas and orzo and cook for 8-10 minutes, or until the orzo is cooked through.
6. Stir in the lemon juice and season with salt and pepper, to taste.
7. Serve the soup garnished with fresh parsley.
