Cheesy Sweet Potato Risotto for Kids

Ingredients:

* 2 tablespoons olive oil
* 1 small onion, diced
* 2 cloves garlic, minced
* 1 cup Arborio rice
* 2 cups vegetable broth
* 1 cup sweet potato, peeled and diced

Instructions:

1. Heat the olive oil in a large saucepan over medium heat.
