Cheap Eats: Under $2 Meals for Staying Home

When staying at home for long stretches, it can be a great idea to prepare meals that don’t cost a lot of money and that can also be made with simple ingredients. That’s what we have for you here. These under $2 meals are easy and fast to prepare, making them perfect for those busy days or when you need a quick and affordable meal.

Ingredients:

  • 1 can of chickpeas, drained and rinsed
  • 2 medium sweet potatoes, peeled and chopped into small chunks
  • 2 tablespoons of olive oil
  • 1 tablespoon of ground cumin
  • 1 tablespoon of smoked paprika
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Place the sweet potato chunks on a baking tray, drizzle with olive oil, and season with salt and pepper. Roast in the oven for 20 minutes.
  3. While the sweet potatoes roast, prepare the chickpeas. In a bowl, mix the chickpeas with olive oil, cumin, smoked paprika, salt, and pepper.
  4. After 20 minutes, remove the sweet potatoes from the oven and add the seasoned chickpeas to the tray. Toss everything together and return the tray to the oven for another 10-15 minutes, or until the chickpeas are golden and crispy.
  5. Remove from the oven, let cool for a few minutes, and enjoy!
