Creamy Celery and Carrot Soup

This creamy celery and carrot soup is a delicious and nutritious meal that is perfect for a cold winter day. It is easy to make and can be served with a variety of toppings.


– 2 tablespoons of olive oil
– 2 cloves of garlic, minced
– 2 stalks of celery, diced
– 2 carrots, diced
– 4 cups of vegetable broth
– 1/2 teaspoon of dried thyme
– 1/4 teaspoon of ground black pepper
– 1/2 cup of heavy cream
– Salt to taste


1. Heat the olive oil in a large pot over medium heat.
2. Add the garlic, celery, and carrots and cook for 5 minutes, stirring occasionally.
3. Add the vegetable broth, thyme, and black pepper and bring to a boil.
4. Reduce the heat to low and simmer for 15 minutes, or until the vegetables are tender.
5. Remove the pot from the heat and let cool for 10 minutes.
6. Transfer the soup to a blender and blend until smooth.
7. Return the soup to the pot and stir in the heavy cream.
8. Heat the soup over medium heat until it is hot.
9. Taste and adjust the seasoning with salt, if desired.
