Asian Spicy Noodle Soup (Vegetarian & Vegan)
This Asian Spicy Noodle Soup is a delicious and healthy vegan and vegetarian meal that is easy to make and full of flavor. It is a great way to get your daily dose of vegetables and protein, and is sure to be a hit with the whole family.
Ingredients:
- 1 tablespoon of sesame oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 teaspoon of fresh ginger, grated
- 1 red bell pepper, diced
- 1 cup of mushrooms, sliced
- 1 cup of carrots, diced
- 1 cup of broccoli, chopped
- 1 cup of snow peas, sliced
- 1 teaspoon of red pepper flakes
- 1 teaspoon of ground cumin
- 1 teaspoon of ground coriander
- 1 teaspoon of turmeric
- 1 teaspoon of curry powder
- 4 cups of vegetable broth
- 1 can of coconut milk
- 1 package of rice noodles
- Salt and pepper to taste
Instructions:
- Heat the sesame oil in a large pot over medium heat.
- Add the onion, garlic, and ginger and cook for 3-4 minutes, stirring occasionally.
- Add the bell pepper, mushrooms, carrots, broccoli, and snow peas and cook for an additional 5 minutes, stirring occasionally.
- Add the red pepper flakes, cumin, coriander, turmeric, and curry powder and cook for 1 minute, stirring constantly.
- Add the vegetable broth and coconut milk and bring to a boil.
- Reduce the heat to low and add the rice noodles. Simmer for 10 minutes, stirring occasionally.
- Season with salt and pepper to taste.
- Serve hot and enjoy!
