Asian Spicy Noodle Soup (Vegetarian & Vegan)

This Asian Spicy Noodle Soup is a delicious and healthy vegan and vegetarian meal that is easy to make and full of flavor. It is a great way to get your daily dose of vegetables and protein, and is sure to be a hit with the whole family.


  • 1 tablespoon of sesame oil
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 teaspoon of fresh ginger, grated
  • 1 red bell pepper, diced
  • 1 cup of mushrooms, sliced
  • 1 cup of carrots, diced
  • 1 cup of broccoli, chopped
  • 1 cup of snow peas, sliced
  • 1 teaspoon of red pepper flakes
  • 1 teaspoon of ground cumin
  • 1 teaspoon of ground coriander
  • 1 teaspoon of turmeric
  • 1 teaspoon of curry powder
  • 4 cups of vegetable broth
  • 1 can of coconut milk
  • 1 package of rice noodles
  • Salt and pepper to taste


  1. Heat the sesame oil in a large pot over medium heat.
  2. Add the onion, garlic, and ginger and cook for 3-4 minutes, stirring occasionally.
  3. Add the bell pepper, mushrooms, carrots, broccoli, and snow peas and cook for an additional 5 minutes, stirring occasionally.
  4. Add the red pepper flakes, cumin, coriander, turmeric, and curry powder and cook for 1 minute, stirring constantly.
  5. Add the vegetable broth and coconut milk and bring to a boil.
  6. Reduce the heat to low and add the rice noodles. Simmer for 10 minutes, stirring occasionally.
  7. Season with salt and pepper to taste.
  8. Serve hot and enjoy!
