* 2 cups cooked quinoa
* 1 can black beans, drained and rinsed
* 1 can corn, drained
* 1 red bell pepper, diced
* 1/2 cup diced red onion
* 1/4 cup olive oil
* 2 tablespoons lime juice
* 1 teaspoon cumin
* 1 teaspoon chili powder
* 1/2 teaspoon garlic powder
* Salt and pepper to taste


1. Preheat oven to 375 degrees F.
2. In a large bowl, combine quinoa, black beans, corn, bell pepper, and red onion.
3. In a small bowl, whisk together olive oil, lime juice, cumin, chili powder, garlic powder, salt, and pepper.
4. Pour the dressing over the quinoa mixture and stir to combine.
5. Spread the quinoa mixture onto a baking sheet and bake for 25 minutes, stirring halfway through.
6. Serve warm.
