Kebab e Murgh – Afghan Chicken Kebab Marinated in a Yogurt Sauce

Kebab e Murgh is a traditional Afghan dish of marinated chicken kebabs cooked in a yogurt sauce. The marinade is made with yogurt, garlic, ginger, and spices, and the kebabs are cooked in a flavorful yogurt sauce. This dish is perfect for a family dinner or a special occasion.

Ingredients:

  • 2 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 cup plain yogurt
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cardamom
  • 1 teaspoon ground black pepper
  • 1 teaspoon salt
  • 1/4 cup olive oil
  • 1/2 cup plain yogurt
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh mint
  • 1/4 cup chopped fresh parsley

Instructions:

  1. In a large bowl, combine the chicken cubes, 1 cup of yogurt, garlic, ginger, cumin, coriander, turmeric, cardamom, pepper, and salt. Mix until the chicken is evenly coated with the marinade.
  2. Cover the bowl and refrigerate for at least 2 hours, or overnight.
  3. Preheat the oven to 375°F.
  4. Remove the chicken from the marinade and thread onto skewers. Place the skewers on a baking sheet and bake for 15-20 minutes, or until the chicken is cooked through.
  5. Meanwhile, in a medium saucepan, heat the olive oil over medium heat. Add the remaining 1/2 cup of yogurt, cilantro, mint, and parsley. Simmer for 5 minutes, stirring occasionally.
  6. Remove the chicken from the oven and brush with the yogurt sauce. Serve with the remaining yogurt sauce.
