Kebab e Murgh – Afghan Chicken Kebab Marinated in a Yogurt Sauce
Kebab e Murgh is a traditional Afghan dish of marinated chicken kebabs cooked in a yogurt sauce. The marinade is made with yogurt, garlic, ginger, and spices, and the kebabs are cooked in a flavorful yogurt sauce. This dish is perfect for a family dinner or a special occasion.
Ingredients:
- 2 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 cup plain yogurt
- 2 cloves garlic, minced
- 1 teaspoon ground ginger
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon ground turmeric
- 1 teaspoon ground cardamom
- 1 teaspoon ground black pepper
- 1 teaspoon salt
- 1/4 cup olive oil
- 1/2 cup plain yogurt
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped fresh mint
- 1/4 cup chopped fresh parsley
Instructions:
- In a large bowl, combine the chicken cubes, 1 cup of yogurt, garlic, ginger, cumin, coriander, turmeric, cardamom, pepper, and salt. Mix until the chicken is evenly coated with the marinade.
- Cover the bowl and refrigerate for at least 2 hours, or overnight.
- Preheat the oven to 375°F.
- Remove the chicken from the marinade and thread onto skewers. Place the skewers on a baking sheet and bake for 15-20 minutes, or until the chicken is cooked through.
- Meanwhile, in a medium saucepan, heat the olive oil over medium heat. Add the remaining 1/2 cup of yogurt, cilantro, mint, and parsley. Simmer for 5 minutes, stirring occasionally.
- Remove the chicken from the oven and brush with the yogurt sauce. Serve with the remaining yogurt sauce.
