“A Taste of France: Homemade Classic Ratatouille”
Ingredients:
– 2 tablespoons olive oil
– 1 large onion, diced
– 2 cloves garlic, minced
– 2 large bell peppers, diced
– 2 large zucchini, diced
– 2 large eggplants, diced
– 2 large tomatoes, diced
– 2 tablespoons tomato paste
– 2 tablespoons fresh thyme leaves
– 2 tablespoons fresh oregano leaves
– Salt and pepper, to taste
– 2 tablespoons chopped fresh parsley
Instructions:
1. Heat the olive oil in a large skillet over medium heat.
2. Add the onion and garlic and cook until softened, about 5 minutes.
3. Add the bell peppers, zucchini, eggplant, and tomatoes and cook until softened, about 10 minutes.
4. Add the tomato paste, thyme, oregano, salt, and pepper and stir to combine.
5. Reduce the heat to low and simmer for 20 minutes, stirring occasionally.
6. Remove from the heat and stir in the parsley.
7. Serve warm or at room temperature. Enjoy!
