- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon sea salt
- 1/4 teaspoon black pepper
- 1/2 cup quinoa, rinsed
- 1 cup vegetable broth
- 1 can black beans, drained and rinsed
- 1/2 cup frozen corn
- 1/4 cup chopped fresh cilantro
- 1 lime, juiced
- Heat the olive oil in a large skillet over medium heat.
- Add the onion and garlic and cook for 3-4 minutes, stirring occasionally.
- Add the bell pepper, chili powder, cumin, smoked paprika, salt, and pepper and cook for an additional 2-3 minutes.
- Add the quinoa and vegetable broth and bring to a boil.
