Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1/2 cup quinoa, rinsed
  • 1 cup vegetable broth
  • 1 can black beans, drained and rinsed
  • 1/2 cup frozen corn
  • 1/4 cup chopped fresh cilantro
  • 1 lime, juiced

Instructions:

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the onion and garlic and cook for 3-4 minutes, stirring occasionally.
  3. Add the bell pepper, chili powder, cumin, smoked paprika, salt, and pepper and cook for an additional 2-3 minutes.
  4. Add the quinoa and vegetable broth and bring to a boil.
  5. Reduce the heat to low, cover, and simmer for 15 minutes.
  6. Add the black beans, corn, and cilantro and cook for an additional 5 minutes.
  7. Remove from heat and stir in the lime juice.
  8. Serve and enjoy!
