Cheese Fondue
Ingredients:
- 1 clove garlic, halved
- 1 cup dry white wine
- 1 tablespoon cornstarch
- 1/2 teaspoon freshly ground nutmeg
- 1/2 teaspoon freshly ground pepper
- 1/2 pound Gruyere cheese, shredded
- 1/2 pound Emmentaler cheese, shredded
- 1/4 cup kirsch (optional)
- Assorted dippers (bread cubes, cooked potatoes, cooked vegetables, etc.)
Instructions:
- Rub the inside of a fondue pot with the cut sides of the garlic clove.
- Pour the wine into the fondue pot and heat over medium heat until it is hot but not boiling.
- In a small bowl, mix together the cornstarch, nutmeg, and pepper. Gradually add the cornstarch mixture to the hot wine, stirring constantly until the mixture thickens.
- Add the Gruyere and Emmentaler cheeses to the fondue pot and stir until the cheese is melted and the mixture is smooth.
- Stir in the kirsch, if desired.
- Transfer the fondue pot to the table and keep warm over a fondue burner.
- Serve with assorted dippers.
