Cheese Fondue

Ingredients:

  • 1 clove garlic, halved
  • 1 cup dry white wine
  • 1 tablespoon cornstarch
  • 1/2 teaspoon freshly ground nutmeg
  • 1/2 teaspoon freshly ground pepper
  • 1/2 pound Gruyere cheese, shredded
  • 1/2 pound Emmentaler cheese, shredded
  • 1/4 cup kirsch (optional)
  • Assorted dippers (bread cubes, cooked potatoes, cooked vegetables, etc.)

Instructions:

  1. Rub the inside of a fondue pot with the cut sides of the garlic clove.
  2. Pour the wine into the fondue pot and heat over medium heat until it is hot but not boiling.
  3. In a small bowl, mix together the cornstarch, nutmeg, and pepper. Gradually add the cornstarch mixture to the hot wine, stirring constantly until the mixture thickens.
  4. Add the Gruyere and Emmentaler cheeses to the fondue pot and stir until the cheese is melted and the mixture is smooth.
  5. Stir in the kirsch, if desired.
  6. Transfer the fondue pot to the table and keep warm over a fondue burner.
  7. Serve with assorted dippers.
